Introducing iOS code structure to senior engineers

I'm a senior engineer with lots of experience in C++, Python, Java, server-side code, single-page web app development, design patterns, etc. My prefered work environment is Linux in the cloud, accessed via SSH, using vim or emacs.

I'm looking for material that teaches people how iOS apps are structured, aimed at people who already know design patterns and have no trouble figuring out the syntax of any given computer language on their own. I'm looking for material that doesn't focus on where to click in a GUI, but rather focuses on which files go where, why, and what their role is in the application.

Are there resources out there that clearly delineate the above information, written for people not new to code?
